Spicy Creole Potato Salad

Creole Potato Salad 3 lbs red skinned pot (you don't have to peel them) 6 large eggs, hard boiled, peeled and chopped 1 bunch scallions chopped 4 stalks celery, chopped The juice of 2 lemons 1/2 cup dill pickles...finely chopped 1 cup good mayonnaise 2 tablespoon yellow mustard 1 tablespoon horseradish 1 tablespoon Course salt 2 teaspoons black pepper 2 teaspoons cayenne pepper Cook potatoes whole starting in COLD water and cover. Check the Potatoes. (run under cold water to stop the cooking process) When cool enough to handle, cut into medium sized pieces. Add rest of ingredients and mix well. Refrigerate. Serve COLD.

Delicious Delirious Southern Pecan Pie

Delicious Delirious Southern Pecan Pie 4 eggs 1 1/4 c. southern cane syrup (or dark Karo) 1 1/2 c. broken or whole pecans 1 c. sugar 4 tbsp. butter 1 tsp. vanilla Boil sugar and syrup together 2 or 3 minutes. Beat eggs, not too stiff. Pour hot syrup in slowly, stirring. Add butter and vanilla. Put pecans in pie shell, pour syrup over top. Bake in moderate oven about 45 minutes or until set. Let cool before serving.

Gather together your four basic ingredients to be happy. Did you know that there are four true ingredients to being happy? What are they? Well to start you need to feel safe, next you need to have a sense of perspective, next a sense of satisfaction, and finally find yourself a quiet, calm serene place where you can just be. Gather you ingredients for Happiness everyday!

Need A Strong Motivator?

Did you know that visual stimulation has been proven to be a strong motivator? Today I made a vision board. It’s just pictures of things I like, or want, or that just inspire me. In the center I pieced together in big letters the word “WRITE.” Why did I set it up? I needed something to get me inspired – motivated. I did it because I need a nudge every now and then to remind me not to procrastinate to get started back writing. Maybe your goal is buying that new house, new car, or a new boat. Or just paying off a bill. Make a vision board- a visual stimulation to get you moving in the direction you want to me.

Need to start over? Where should you start?

Need to start over? Where should you start? Start from right where you are. To get some where….From anywhere you need to start. The process of redirecting yourself is simply put just to start over. No matter how painful, slow, confusing or frustrating it may feel just start over. From where? From right from where you are. No one but you really knows that anyway, so refresh yourself think of the fact that every day when you awake, begins a new day. So change direction and begin anew!

Why I know books will never go totally away!

Why I know books will never totally go away? Why? Because each day each of us need some kind of inspiration and for me I find it here and there and something I’ve read in a book. What about you?

Focus on your goal!

In living this life, there may be times when family, friends, associates and yes even society will misunderstand or misjudge you. Have heart, and stay focus, keep your eye on your goal. Know what you want, and where you want to go. Every person has an opinion - And yes they will think your opinion is selfish. But not their own. Ignore them, tomorrow they will have a new opinion, and a new object or person to focus that opinion on. Peace!

Today I Learned Procrastination is a Thief!

Once upon a time I went to a seminar and heard a wonderful speaker named Jewel Diamond Taylor. She said, “Procrastination is a Thief.”

She was right. I wasted the whole day missing my mother and procrastinating about writing and I didn’t do anything. As with anyone who experiences the grief of losing a parent. You know there are good days and bad days in dealing with grief. And sometimes we can take the procrastination thing to the extreme and do nothing but hold on to our grief and feel miserable.

“Grief is a spiral of feelings...It is not a straight line with a beginning and an ending. ……It is a collection of feelings, behaviors, and thoughts. They can overwhelm us, if we let it. But we don’t have to let it. We must take the step to heal. To move forward and we do this by working to heal the pain of loss and keep our treasure chest of memories of our loved one within our hearts.”

I will not say I have a fool-proof plan of action that is a cure all for grief. No I don’t. But I will say take one step at a time to reach the stage of acceptance that your loved one is physically gone so that you can move on.

“Healing is remembering, recollections, and reorganizing. “

Always have compassion for yourself and those around you. You will find your way again.

So thank you Jewel Diamond Taylor for reminding me that “Procrastination is a Thief.”

And thank you grief for reminding me of the love I will always carry in my heart for my mother.”

Today I have done my best to heal. Tomorrow is a new day and yes I will I attempt to do my best no matter what.
